use Agave nectar. It is all natural, it is safe for diabetics (humans can't process it) and it actually helps to lower cholesterol. It can be found at specialty stores like Wild Oats or Whole Foods. Splenda is artificial and is not very healthy for you (contrary to what the product states). It doesn't take much either...just a bit, because it is very sweet.
I use it...and I am the only one in my family who does not have diabetes (everyone else in my family has become diabetic)

It would depend on the recipe, but if you are looking for natural sugars these are some that I use regularly:
agave nectar, fruit juices (fresh squeezed apple and orange work well) as well as pure maple syrup.

I use Stevia and cause so little is need if I make it into honey like item I use some cornstarch. It takes alot of practice to
get it right! When U use stevia in cup of
coffee a tip of tsp or tblsp. is sufficient to
sweet the coffee. Too much and you get a bitter taste!

They sell sugar-free honey in stores, even in wal-mart... I'm sure that the fake sugars aren't exceptionally good for you though.
