1/2 cup pecans
1 cup cracker crumbs
1/2 cup cheddar cheese
heavy doses of sage, onion powder and garlic powder
1 egg (or replacer, like egg beaters)
1 can V-8 juice (8-12 oz)
Mix your pecans, cheese, crumbs and seasonings.
Add 1 egg or enough egg replacer to make your mixture clear the sides of the bowl. Add a little V-8 juice to the mixture and then roll into balls. Put in a baking dish sprayed with cooking spray and then pour the rest of the V-8 over the meatballs.
Bake at 350° for about 35 minutes or until browned and the V-8 thicker but still on the wet side (don't want to turn it into tomato paste!)

INGREDIENTS
Meatballs:
4 eggs
1 cup shredded Cheddar cheese
1/2 cup cottage cheese
1/2 cup finely chopped onion
1 cup finely chopped pecans
1 teaspoon dried basil
1 1/2 teaspoons salt
1/4 teaspoon dried sage
2 cups Italian seasoned bread crumbs
Sweet and Sour Sauce:
1/4 cup vegetable oil
1/4 cup white vinegar
3/4 cup apricot jam
1 cup ketchup
1/4 cup minced onion
1 teaspoon dried oregano
1 dash hot pepper sauce
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.
In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.
Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.

This may help....
VEGETARIAN MEAT BALLS
3 eggs, beaten
1/2 tsp. salt
1 c. Special K cereal
3/4 c. grated Cheddar cheese
1/4 c. raw oatmeal (quick)
2 tbsp. mushroom soup, cream or milk
1 c. pecan meal
1 clove garlic, minced
1 onion, chopped fine
Mix all ingredients and shape into balls. Brown in oil. Simmer in tomato or V-8 juice to cover, 1 tablespoon sugar (or less), 1 teaspoon soy sauce and 1 bay leaf. Simmer medium to low heat for 30-45 minutes.

1/2 pounds soy-mince soaked
1/2 cup onion
Garlic to taste
1/2 cup cornflakes
1 teaspoon salt
1 cup milk
1/2 cup chopped pecans
1 tablespoon flour
1 1/2 cups apple juice
1 1/2 teaspoon curry
2 tablespoons oil
Blend soy mince, onion, garlic, cornflakes, salt, milk and pecans. Shape into 60 balls. Set aside. Heat oil in large skillet. Add meatballs. Brown well. Remove from skillet. Add flour, apple juice, and curry; mix until well blended. Cook, stirring constantly, until makes a thick and smooth gravy. Return balls to gravy. Simmer 5 minutes.

Go to the health food section of your supermarket or a health food store and get the meatless soy protein stuff it comes in a can and can be added to your other ingrediants to make meatless meatballs.
