It has noname but I love my dish. Basically it involves cooking spaghetti and while it cooks get a big bowl and chop (for 2 people) about 40 cherry tomatoes in half, add about 30 black olives, 3 tablespoons of olive oil, 3 garlic cloves crushed and loads and loads of basil leaves chopped. Then last but not least 1/2 tsp of crushed chillis. Put the pasta on a plate then add the tomato thing and then add some chopped feta cheese on top. I LOVE This

For Two People:
Tagliatelle Pasta for two people
1 packet of mushrooms
1 large onion ( finely chopped)
50 grams of Blue cheese
1 handful of coarsely chopped walnuts
1 small tub of sour creme ( either full creme or light)
Fresh basil or basil pesto
garlic
salt pepper
Cook Tagliatelle with a bit of olive oil
Meanwhile, fry onion. Add garlic and fry for a few minutes.
Add mushrooms which you have cut in four.
Cook for five minutes and reduce to medium heat.
Add sour creme. Let simmer for 5 minutes. Add blue cheese and stir in sour creme. Stir in some chopped basil leaves. Add salt / pepper to taste. Simmer for 5 minutes.
Dish up tagliatelle with the sauce, and sprinkle some walnuts on top.

Make a good pesto with parmesan cheese (freshly grated, and toated pine kernels along with freshly chopped garlic, basil and parsley, and good quality extra virgin olive oil.
Then make a tomato sauce by sweating the garlic and onions, add finely diced carrots and celery and leeks and also sweat till softened, and ,then add chopped tomatoes.....vine tomatoes preferably or tinned tomatoes along with some sundried tomato puree, add chopped coriander leaves and fresh parsely, a hint of fresh chilli, along with fresh basil, crushed black peppercorns and a hint of sea salt. Bring to boil and simmer for 20 mins and then lightly puree.....toasted pine kernels may also be added for more flavour and also optional is a hint of cinnamon.
Cook your pasta 'al dente' and refresh under cold water until required.
To reheat use a tiny amount of olive oil heated in a saucepan along with your pesto and toss the pasta in it till heated through. Serve with your sauce.
Delicious, and some folks may think its time consuming but the flavour is excellent and well worth the effort. Sauce can also be chilled and stored in your fridge for up to 5 days and can also be used as a base for spaghetti bolognaise and lasagne as well as several other italian dishes.

Slowly fry an onion. Then add a tin of chopped tomatoes, then lots and lots of herbs, really lots, all your favourites, basil, oregano, majoram, rosemary, chives and MINT. It will become a slightly murky colour, then simmer it all together for a time. When the pasta is cooked tip it into a colander and into the still hot cooking pan melt a big blob of butter and into that stir in a crushed clove of garlic (shouldn't need any more heat), tip the drained pasta back in and stir it around to coat it. Yum. Simple pleasures!

1/2 tin of chopped tomatoes per person
handful shredded basil
bit of garlic granules
seasoning to taste
wack them all in a frying pan and simmer for a few minutes. you can add peppers and onion if you want but be careful not to use to much. pour over the pasta and serve with grated cheese, preferably Parmesan or a vege alternative.

pasta with some broiled fish or chicken on top is very tasty and meat-free. You would also be getting some much needed protein and B12. Vegetable only diets do not contain complete proteins and are therefore not considered whole nutrition.

Baked ziti with a creamy ricotta/parm/mozzarella cheese layer
Cheese mixture is seasoned with minced garlic, fresh ground pepper, oregano and a couple secret ingredients that make it my own, all bound with a lightly beaten egg.
Cooked ziti, mixed with a non-meat pasta sauce - layer 1/2 in baking dish, add cheese filling in a thick layer, cover with remaining sauced ziti, a layer of grated cheese and a final few extra ladles of sauce to keep all moist.
Cover and bake for 35-40 minutes in a 350 degree F / gas mark 4 oven. Remove cover, bake further 10 - 15 minutes. Carefully remove from oven and allow to sit for 10 minutes before serving.
Guaranteed hit - have made this for weddings and was very well received!

Spaghetti with a meat free sauce! Then fry some zucchini and melt cheese on top of it! When u get ready to serve the spaghetti put the zucchini and cheese on top!

Chop up some fresh tomatoes, fresh basil leaves, scallions, and mozarella cheese. Mix them all together in a bowl, top with still-hot just-cooked spaghetti,and toss the whole thing with a bit of olive oil, salt, and some fresh-ground black pepper.

I dont eat meat but do eat fish and I love pasta in a sort of arrabiato sauce (tomato sauce with chilli and peppers) with king size prawns - if you don't like the sound of it you should try it - its lovely and goes down really well with family and friends (I mean they like it ... not that they go in it - jeez I'm not that experimental!!)
