Sesame Prawn Toast Snack, starter or side dish. You can make the paste a few hours in advance, wrap it up and put in the fridge until needed. 1 lb cleaned raw prawns, chopped 1 teaspoon salt 1 egg 2 teaspoons fresh grated ginger 1 tablespoon light soy sauce 2 tablespoons chopped green onions 1 1/2 teaspoons sesame oil 10 slices thinly sliced bread, crusts removed 4 tablespoons sesame seeds, approx oil, for deep-frying 25-30 toasts 1. To make the paste, put in your food processor: the prawns, salt, egg, ginger, soy, onions and sesame oil, process into a paste. 2. Cut the bread into rectangles, approx 3 per slice. 3. Spread the prawn paste on the bread, with a slight mound in the center. 4. Put the sesame seeds in a small bowl and press the paste side into the seeds. 5. Heat the oil to a medium heat and deep-fry the toasts paste side down for 2 to 3 minutes then turn them over and fry until they are golden brown. 6. Remove from the oil, drain on paper kitchen towel. 7. Repeat process until they are all done. 8. NOTE: Use bread that is not fresh, if it is, dry it out in your oven, it will absorb less oil You can also make the paste by hand chopping everything very finely.

4 slices of thick white bread
200g or 8 oz of king prawns
100g of 4 oz of water chestnuts
100g or 4 oz of pork/pork fat
30ml or 2 tbsps of sesame seeds
550ml or 1 pint of vegetable oil (for frying)
½ egg
Cooking Instructions
Peel and gut the King Prawns, chop into very small cubes. Slice pork and fat into very small cubes, Chop the water chestnuts into very small pieces. Then using a chopping knife and board dice the ingredients together into a mince content, when finished, place in a large bowl and mix in the egg (this will further bind the contents together. Taking the four slices of bread, remove the outer crusts. Then using a fork, spread the King Prawn content on each slice of bread, pressing firm down (make sure you do not flatten the bread). Finally sprinkle some sesame seeds on the toast and now it is ready to cook. Heat the vegetable oil in a wok, then place in the King Prawn toast, turning only once or twice. When they are golden brown the King prawn toast is coked. Chop the toast into equal pieces and serve with some tomatoes.

I have read recipes for Shrimp toast and it as follows, I'm sure that you can substitute prawns for the shrimp, since they are similar.
1/4 lb of baby shrimps (about 300)
6 Eggs
2 Tablespoons of ginger
2 Tablespoons of garlic
6 pieces of white bread
In a food processor grind shrimp, ginger, and garlic into a paste. Then add to egg. Dip bread into egg and shrimp mixture and fry in pan, similar to making french toast. Then quarter the toast when finished and Viola! Shrimp toast...or prawn toast in your case
