Clams in black bean sauce
The garlic and ginger offer a nice little zing which complements the savory fermented black beans. All of these flavors meld nicely with the natural sweetness of the clams. Also, when cooked in a very hot wok you get a slight hint of smokiness.
Spoon the extra gravy over rice... I'm a happy camper.
Another dish I like is Spicy Prawns
Deep fried prawns in a light batter served with a spicy sweet and sour sauce. The sauce should be spicy, sour and slightly sweet. The flavors are layered where the spiciness hits you first, then the vinegar washes some of that away and the sweetness of the sauce and the prawns accented with garlic and scallions rewards your taste buds.
However, it's a hard dish to find done properly. Some places use too much sugar or ketchup in their sauce. It makes me feel like I'm eating a melted lollipop or french fries.

My favorite Chinese Dish, in a figurative sense, is Lucy Liu.
Joking aside, I once tried something called Mandarin Fish at a restaurant in Maryland. It was deep fried sea bass, served with pineapple, peas, and other vegetables. It was some of the best Asian food I've ever had, so naturally I've never been able to find it anywhere else (I live in Pennsylvania...it's kind of a long trip, just for dinner).
Most of the "Chinese" restaurants around anymore are actually "Asian-Fusion" places; they serve traditional Chinese fare, along with Japanese, Thai, and Korean dishes. There's a restaurant near me that's owned by a Chinese family. They serve primarily Chinese and Japanese meals, AND they feature some of the best steaks in town! The place is great, and it's always packed. Anytime I feel like sushi, a New York strip steak, and an ice-cold Mexican beer (all prepared/served by Chinese people), that's the place I go.

I love General Tso's Chicken, and also Hunan dumplings with the peanut butter sauce. And every now and then the plain old stir-fried vegetables are fantastic, but you never know about those, depends what's in season and how long it's been sitting in the pan I guess!
(the Hunan Dumplings are also great cold for breakfast the next morning as long as they're not too greasy!!)

My favorites are the same! But I guess I also like this Chinese-American dish we had in a Chinese restaurant in Santa Ana, CA. It's mayonnaise shrimp. When they ordered it, I was a little skeptical, but when I tasted it, it was SO good. It's breaded and fried shrimp (similar to Tso's chicken) but it's in a honey-lemon-mayonnaise glaze with sesame seeds over it. SO good, you have to try it.

Sweet and Sour Chicken with fried rice. Its the one thing at the chinese restaurant i can be sure isn't cat. Just kidding it just tastes really good.

I personally love Cantonese Chow Mein. It's great because you get a little bit of everything (shrimp, chicken, pork, calamari, etc). I also like szechwan dishes because I like spicy food.
