Loma Linda makes a canned product called "Vegetable scallops" from wheat gluten. its very bland right from the can, but breaded and fried and dipped in some veggie 'tartare sauce' its yummy. Has protein, but otherwise not tremendously healthy in my opinion.
I like to cut very firm tofu into 'fish stick' shapes. Dip in a bit of soy sauce, then wrap each piece in a strip of Nori. You can fry or bake it as is on a pan with a bit of oil (I like sesame)... or you can dip it in cracker crumbs or a tempura batter and then fry or bake it, turning once to brown.
This is both healthy and delicious!
I used to not like seaweed because i thought it tastes like fish. Then I realized, in fact, fish tastes like seaweed.
PS If you're looking for a tuna salad substitute for sandwiches etc. make a tofu salad and add a bit of seaweed. Lots of recipes online for tofu salad--- but basically, crumble firm tofu, minced onion, celery, and whatever (I like a little bell pepper, grated carrot) a dollop of vegenaise, some salt, pepper, a pinch of dill. Delicious!

In the U.S. Worthington Fillets are commonly available in the freezer section along with chub packs of Tuno. They also have a product called Skallops available canned. Quorn makes a fish analog that isn't available in the U.S. but is available in the U.K.
The fillets and tuno are quite nice, fisheating folks that I've fed them to were decently impressed with the products the Skallops are ok. Never had the Quorn stuff since I'm in the U.S.

I've been vegetarian for a long time and I don't know of any fish substitute. Generally, even things like fake crab meat is still made from fish.

I've seen recipes call for "shrimp substitute", but I've yet to find it in a store.
I'll have to check out that website one of the first posters gave. Imitation fish would be a nice change of pace!
