When it comes to cuisine, it's all about balance. Every cuisine has something healthy and unhealthy if you eat to much of the unhealthy ones. WIth Chinese food, I would say soy bean products, Tofu, steamed vegetables and dim sum are healthy.

If you cook it yourself, rice, vegetables, curry, stir fried in Olive Oil
Soy Sauce has to much salt and if you eat at a Chinese Restaurant the problem there is they use Additives for improvement of their food, that are not healthy.

Usually chinese food is healthy (in China), but western restaurants tend to serve meals that are deep fried, so stick to steamed rice, steamed noodles and dim sums (steamed pockets) or anything that is not deepfried, soaking in soysauce or in sweet n' sour sauce. Bad, huh? that means no spring rolls, egg rolls, fried rice, chop suey and sweet n' sour chicken.

Chicken chow mein is very good and healthy and does not stay in your system for too long. Try it sometime.

Anything that has not been deep fried first (i.e. General Tso's chicken) and avoid fried rice as well.
