I've been off of red meat and poultry for the past 2 1/2 months. Which in technical terms is pescatarian, not vegetarian. I've gone completely veg before, but it only lasted about a month. The south doesn't exactly cater to it! At least not on my campus. Pescatarian is at least doable.

However, now that I've come this far, I know I should be more concerned with the health implications of such a drastic change in diet. For one, there are some minerals, proteins, etc, that mainly come from beef, but combinations of other foods can replace it.

I know to take my vitamins! But does anyone have any advice on how to go about being a pescatarian and still giving my body everything it needs? Websites or personal experiences, whatever. :)

Red beans and rice, a Southern dish, yes? I don't know how to cook it, but if the recipe calls for a meat stock for the rice, do it with water or veggie stock instead.

As long as you continue taking your vitamins, including B12, and you eat a variety of plant based foods, there isn't anything to worry about as far as getting enough nutrients. Only 9% of our caloric intake should come from protein, and grains, legumes, and veggies have everything you need. Really.

For butter, use margarine. For lard, use vegetable shortening. For bacon flavoring, use Bacos, they're made of soy.

Try going vegan. Since beans and grains are available in the South, you won't be missing out on protein.

i doubt whether you consume dairy product. I have no idea about the south. As for me, I went to become a pescatarian for 6 months then took a month break and then changed to ovo-dairy vegetarian for the last 2 years and 4 months. my own goal is eventually to become a vegan but yet I love cooking, although I do not taste my cooking, I sometimes hesitate whether I should continue on...
for me, getting vegies, grains, and fruit is not so hard~ i think it's really depend on your preferences... here's a vegan-helping "guide"

If you take a multivitamin and eat a varied diet you should be fine-there are no nutrients that can only be gotten from meat.
