Made egg fried rice tonight and discovered too late there was no soy sauce in the house. Added a tiny amount of fish sauce but the whole dish lacked taste.

I made egg fried rice because I had eggs I wanted to use up, had thawed some prawns and made sweet and sour chicken too. It was too late to make anything else and the ingredients had to be used, and the shops were shut.

How about Chinese vinegar, or in a pinch, even ordinary vinegar? Both are pretty tasty... but it seems half the point of the soy is the slightly salty flavour, you could just add more salt, bit more pepper. Mmm... and butter... tea tonight was left-over rice, just white rice, boiled, with salt and a knob of butter melted into it... very tasty... I followed it up with a salted duck egg, eaten from the shell with a spoon. Yum! Leftovers from a birthday part a few days ago, always the best food... shouldn't have eaten the candles though :(

But did you hear the story of the miners who used to go down the mine with a candle made of boiled fat... that was okay to eat, in fact, they used to snack on it, how useful! Both light source and packed lunch...

yup, definitely time to go to bed now I think- but try that Chinese vinegar! Chiang kiang, the brand I get comes in bottles with little yellow tops, I recommend it highly... A word of warning though, it's hard to keep it in stock because you use it up so quickly once you've got the taste for it...

Definitely vinergar -- the dark one. Your dish will taste as good as with soy sauce. You may want to add a teaspoon of sugar. I can guarantee you excellent results. In fact, you may start using it even if you have soy sauce!

just made fried rice without soy sauce then...not every kind of fried rice dish has soy sauce on it (even most american-chinese style restaurants use it)....but for egg fried rice, i don't mind w or w/o soy sauce, but definately needs green onion in my opion. :P

I do not add soy sauce in my fried rice but I add salt to taste. You may add a tablespoon of oyster sauce to taste. If you do not have oyster sauce then just add salt (black pepper is nice too) or garlic salt to taste.

Personally, if there is no soy sauce available for a dish that requires it..... why make it at all? Thats like lasagna with no ricotta cheese!

have you tried bbq sauce and a little bit of Worcestershire sauce. Lol, other than that, I can't think of anything else!

Try mushroom ketchup which you can get from healthfood stores and tesco is also beginning to do it - at long last. Delicious with everything!! Must go and buy some today!

Some food items don't have a substitute. I would have adapted by going in an entirely different direction.

You'd maybe get away with using Worcester sauce.

I put ketchup in my fried rice. It doesn't sound good, but it tastes good. Then again, I love ketchup in everything.
