Most people say TUNA is the best, although there are different types:
Regular tuna (japanese: maguro): very red color.
Medium-fatty tuna (chu toro): more pink.
Fatty tuna (o toro): lighter pink.
The price goes from low (tuna) to high (fatty tuna), although personally I think medium-fatty is just the best.
Chicken tuna? Never had it, but Shrimp (ebi) is an easy start if you have never had sushi. You can get it cooked or raw.
California rolls are very tasty, with avocado and crab inside and fish eggs (usually herring) on the outside. They're so good, they've made it back over to Japan and are seen in many good sushi shops.
Uni is sea urchin, and is a difficult flavor to get used to. I'd beware of this!

fortunately, there are many types of sushi for a beginner to try. my first roll was an AAC (avocado asparagus cucumber) roll, strictly veggie. it had things i was familiar with and enjoyed, coupled with a new presentation and flavor (nori, or the seaweed wrapping the roll). for some people, it's not necessarily the fish that is difficult to enjoy, but rather the nori. trying a veggie roll can get you past that hurdle, or tell you that this just isn't going to be something you can enjoy. there are a lot of veggies to choose from, and even cooked egg is used.
from there, try something with a fish you are familiar with, like a shrimp, crab, or salmon roll. california are very popular, which are crab and avocado. you can get plain shrimp, like in a mexican roll (shrimp and avocado), or tempura shrimp, where the shrimp is breaded and crunchy. that adds a new dimension of texture.
after that, i would try a mild fish like a yellowtail (hamachi), which isn't too "fishy" tasting. i think tuna is fabulous, especially when prepared in a spicy manner (ginger and wasabi usually), but it's a little "meatier" than yellowtail. and don't expect it to be anything like the taste of canned tuna. like apples and oranges.
for a beginner, unless you are very adventurous, or are fond of "fishy" and odd flavors, wait on the uni (sea urchin). it's quite strong and many people do not like it. if you're looking to be adventurous and have a more-than-likely good experience, try eel. it's quite sweet and not what you would expect.
i've never been in a restaurant that served chicken sushi. frankly, i would think there would be more health issues with chicken, unless it was cooked. perhaps you are thinking of chicken yakitori, where chicken chunks are barbecued on bamboo skewers. if so, those are quite yummy, especially with green onions. asparagus yakitori are incredible, and might make you start grilling your asparagus spears at home.

I'd recommend the shrimp for your first time.
The shrimp is cooked. The tuna will likely be raw.
Try the shrimp first and if you like it you can start to get a little more adventurous.
I've never heard of chicken sushi and I've eaten lots and lots of sushi.

I've never heard of a place that puts chicken in sushi...
Tuna is good, and so is the shrimp, but California roll is good for beginners. It usually has crab, avocado, and cucumber.
Some places do it differently than others, of course, but it's very mild and easy to eat. Be sure to dip it in some soy sauce, or it will be bland.
If you're feeling very adventurous, try the eel. It's delicious.

It you are new to the Japanese cuisine, I would suggest you to start with some vegetable sushi or maybe shrimp sushi if you like shrimp. I personally like tuna sushi.

A good first time sushi to try is the grilled ahi tuna.
I shared the same first impression experience with many people that SWEAR that it tastes and feels like very expensive, rare fillet mignon steak.

For your first, get the tuna! Tuna sushi is wonderful, especially dipped in a little soy and wasabi (which they will offer when they bring the sushi to you).
