Bok choy is in the cabbage family. It looks kinda like celery with cabbage type leaves on top. It's snow white, tender crisp and sweet. It's excellent in stir-frys and salads. It's also extremely healthy for you. Here's a link to complete information...

Choy or choi is merely the chinese word for cabbage. Pak/Bok choy ( they are the same thing ) has already been described, it is sweet and mild in flavour, the stalks take longer to cook than the leaves and so should be cooked separately.
Choy sum is a flowering cabbage which often has the yellow flowers still attached. It is more delicate than Pak choy with narrower stalks and leaves.
Ong Choy is water spinach/ swamp cabbage / kangkung and is a long grass like leaf on a long hollow stem. It is slightly bitterer than the other two but has a delicious fresh flavour.
These are the most common 'choys' as far as I know. Hope that helps.

Bok choy is cabbage-like but bitter. It looks like celery with leaves on the top. It is sauted or stir fried and very good.
