As long as it's been stored and wrapped properly you should safely be able to eat leftovers for about a week. Any food like poultry or dairy, Including things with mayo have about a 4 hour window before food borne illness sets in. Dont save leftover salads w/ mayo or sour cream if they have been out more than 4 hours. Keep to the 4 hour rule (thats what professionals do for buffets and such) and always wrap everything seperatly.

It even starts to taste funny after the first week. Best practice is to remove all meat from the bones the same day and store the meat safely. If you have a great deal left, it would do well to store some in the freezer for later recipes like soups, meat pies, chili, etc. saving out only as much as you feel you can consume in that first week. My mom used to also save the bones (carcass) in the freezer to make a wicked good pot of turkey noodle soup and serve it with cornbread on a nice cold Saturday afternoon :o)

if your turkey was refrigerated under two hours after you baked it you can eat the leftovers for two to three days. if thee stuffing was removed and the leftovers frozen within 1 day you can unfreeze and eaten up to six weeks. All of this information is only good if you followed food safety rules when you prepared and cooked your turkey

I do reccomend brining it as well.. (basicly it means to soak it overnight in water with sugar, salt, and whatever spices you want) On my turkey for roasting time I take a stick of butter and stick pieces of it under the breast skin, and on the thighs. Sprinkle over it parsley, paprika, sage, 1 large chopped onion, 1 large chopped apple. And then I drape the outsides of the bird with bacon slices. My stuffing: chopped up old bread crumbs, 1/4 cup raisins, 1/2 onion chopped, 1 large apple diced, nutmeg, salt, peper, 1 egg, I mix it by hand in a bowl and stuff it into the bird... it will cook as the turkey cooks. I have also use dried cranberries in my stuffing.

About a week if you just leave it on the turkey. About 2 weeks if you carve it and store it in a Tupperware-like container.
It may be safe after that, but it won't taste nice.

Anything you won't eat by the 3rd day can be frozen. Just wrap it tightly in foil, then seal in a ziploc bag. It will be good up to 6 months in the freezer.
