Not green peppers and mild cheese, like I had in Mexico? How are they usually made?

Chiles Rellenos means "stuffed peppers" (basically) so really any hot pepper and any filling might be used. Most commonly you'll see poblano peppers and cotija and/or jack cheeses.

In the USA, when someone says "rellenos", they are usually referring to chiles rellenos. Relleno is the Spanish equivalent of "stuffed". Latinos specify what it is they are stuffing. For example, papas rellenas is a Latino dish that is stuffed potatoes.

The things made with fried and breaded jalapenos stuffed with either cream cheese or other cheese are called "Jalapeno Poppers" in the part of the country I live in (Colorado). They are usually served as appetizers or bar food.

The chiles rellenos we find in this part of the country are usually green chiles (also called Anaheim chiles), or poblano chiles. Most often, they are stuffed with a mild cheese. Sometimes, the poblanos are also stuffed with meat or corn and/or other vegetables.

My favorites are the green chiles with Monterrey Jack cheese stuffing. I like them with an egg batter.

No not Jalapenos. They are made with Poblano peppers and a mexican style cheese that melts well like chihuaha

They are ususally poblano peppers stuffed with cheese, not necesarily jalapeno cheese, nor cheddar, but something like monterrey jack.

where i am from they are made with poblano roasted peppers then peeled and filled with white cheese and beef. then they are dipped in egg whites and fried...they are really good!!

I have used Anaheim chillies and they were good. Of coarse I just use what I have, it may be mozzarella or cream cheese depending on what I have on hand.
