You should be relatively safe ordering anything with a brown sauce. But each place is different; just ask. And if you want it different, just ask them to make it that way. If you're at a restaurant they'll pretty much make anything you want, as long as they have the ingredients.

To my dismay, I discovered that most dishes listed as vegetarian in Chinese restaurants contain chicken broth. Many people think vegetarian/vegan just means no chunks of flesh. (I've had more than my share of well-meaning relatives who offer you soup or stew and suggest you just 'pick out the meat'). Yuk! You gotta watch Thai food too-- almost all the Thai sauces contain fish, and it is added to almost everything.
I now always ask-- even if the server has to actually go ask the chef (if they are nice about it I leave a bigger tip).
Fortunately many of the stir-fry dishes are very quick to make and if you ask they will make it especially for you without any meat broths or non-vegetarian sauces. You will notice a difference in taste, though-- much more bland-- which will clue you in to how often you have unknowingly been consuming animal products in the past.
Usually restaurants that advertise as health or natural foods are more conscious of diet restrictions--- or restaurants in university towns, "upper-end" neighborhoods etc. where they will get more inquiries about the ingredients in the food.
P.S. As you probably know, there is no reason a vegan diet will make you sick! In fact, it is a very healthy way to live. Just add a little nutritional yeast to your cooking, or as a topping to brown rice, etc. and the B12 that is hard to come by otherwise without dairy will be taken care of. Or fortified soy milk. Eat lots of varieties of preferably organically grown whole grains, veggies, seeds and nuts, soy products, and fruit...you will be making the very healthiest dietary choices.

your right, restaurants do differ in their cooking methods, but to get right down to the point you can ask the waiter/waitress, cheif, or even the manager about how and what they cook. i'm sure the reastruant's employee's will be more then happy to educate you about their food choices and even make you a speical dish of all else fails.

It depends upon the restaurant.
Many cities have a vegetarian association of some type, and they can help with anything local. The guide I've listed is international, but I don't know if it's up-do-date.

when i go chines i go to buffet. and there is section that you can make you rdish by what you want and the guy infront of you just steam it and cook it. it is very easy. i even asked the guy no oil and cook it only with water.

Just ask the waitress, many just have veggies in them but vegan diet is very limiting, hope you don't make yourself sick one day.
