It was invented or discovered back in the middle ages, as the cold weather did not allow the local cabbage to be stored over the winter, they packed them in jars and put salt over them, as it sat the cabbage fermented and became sauerkraut, sauer being just taht sour, and kraut is the german word for cabbage like wurst is for sausage.

Over the years the Saxons imported the food to Russia, Poland and other Northern european and Slavic nations, it is used all over Europe and even in France along the Alsace/German border. Being a former chef one of my favorite dishes is Choucrote Garni, a combination of sausages, smoked meats, potatoe/carrots, sauerkraut and spices served family style.

I am of mostly English/Irish/Scottish heritage but can trace my roots back to Grmany also were I am a decendant of Martin Luther the founder of the Lutheran Church.

Well, why do they do call Germans krauts? Every culture that has utilized cabbage has methods of preserving it. I'm of German ancestry and make kim chee.

It was always a staple for my grandparents and we're all German. (I'm about 99% German and I hate the stuff.)
