This is by far the Best guacamole recipe I have ever found.

Guacamole
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 tsp salt
1/2 cup diced onion
3 Tbs chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 tsp minced garlic
1 pinch ground cayenne pepper (optional)

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

I like to use the guacamole seasoning packet you find in the produce section by the avocados.

1 use 2 avocados. I mash 1 and dice the other.
The juice of one lime.
1/4 cup of chopped red onion
1 roma tomato chopped
a dash of cumin.

I add the lime juice to the avocados first and then combine the rest of the ingredients.

I just use hot Pace picante sauce and mix it with the avocadoes until it tastes right. Very simple and tastes excellent.
