White is almost nothing BUT protein.

All of the fat soluble vitamins, (A, D, E and K) are found in the egg yolk. Egg yolks are one of the few foods naturally containing vitamin D. Egg yolk is a source of lecithin, an emulsifier.

A large yolk contains more than two-thirds of the recommended daily limit of 300mg of cholesterol.

The major proteins found in egg white (> 1% of the total protein content) are listed below:

* Ovalbumin 54%
* Conalbumin 13%
* Ovomucoid 11%
* Lysozyme 3.5%
* Globulins (G2, G3) 8.0% (?)
* Ovomucin 1.5%

Other protein components include, flavoprotein (.8%), ovoglycoprotein (.5%), ovomacroglobulin (.5%), ovoinhibitor (.1%) and avidin (.05%).

Egg yolks contain a little less than half the protien but all the vitamins a, d, e all the fat cholesterol and higher in calories (60)

Egg whites contain a little more than half the protien, no fat, no cholesterol and have fewer calories (15)

I have no clue where those people got their info but it isn't the yolk has all the bad stuff in it. The bad fat and HDL (bad cholesterol).

You go Christopher L. Thanks for gathering all that info. My husband went to school for nutrition and you are absolutely right the white has the most protein.

The yolk has all the nutrition in it. It has fat, cholesterol, protein, calories, etc. The egg white has almost no nutritional value whatsoever.

ounce for ounce it is the egg white. side note, the white has almost the same nutritional content of human semen.
