As a fan of the "Blues Brothers" and former inmate of a parochial high school, I know that Penguins and convents are a modern day phenomena, post Bible anyhow.

I don't understand that either.
The Bible was written by people who had been to Antarctica right?
And then there was Noah's Ark...penguins must've been on it....so there should have been some mention about Penguins.

I'm sure it was just an over-sight.

They may not have been mentioned separately, maybe because they didn't interact alot with humans. But, the Bible says they were created on day 5 (or 6 depending on how God saw them). They were part of what he declared good.

The writers of the middle eastern tales and legends you mention did not have the opportunity to meet any penguins.

Little known fact: the Pharisees were giant emperor penguins. This was not mentioned because it wasn't particularly relevant to anything.

Jews didn't know that penguins existed - they didn't know North Pole existed. And what about BATS? I like bats...
