They are RCA cables. The ends are specifically Male RCA cables. The receptacles that they plug into are Female RCA's.
Yellow-is for the video signal
Red- Right Audio channel
White-Left Audio channel
Left and Right audio are what gives you stereo sound.
You can actually plug them in in any order, as long as the source and the destinations are the same. For example: You can plug a yellow cable into the red right channel of your stereo and the red right channel of your TV. It isn't recommended though. Not only can it lead to confusion, with some cables the video portion of the cable (and only the video) have extra shielding to prevent signal loss.
You can purchase an RCA adapter kit (RF Modulator) from Radioshack, Bestbuy, etc. Any major electronics retailer.

The yellow wire is for video - red and white are left/right speaker wires for the audio. I am not sure what the other wires are for unless maybe high definition or sound quality.

The proper term is "stereo audio/video cables" the connection is sometimes called "RCA". Oh, and the THX standrad for what you normally see as the white connection is blue, so don't be scared if you see that, it's just the THX standrad for the same thing!
The term "component" usually refers to "component Video" which isn't exactly the same, the standard colors for that connection are red, green, and blue... they are typically used for connectind an HDTV to an HD DVD player, and they aren't quite the same as the "RCA" or "stereo a/v s."
