Many reasons, including:
1. nuclear standoff
2. they're not threatening their neighbors by wiping them off the map.
3. they're not martyrs
4. they abide by the MAD doctrine
5. they believe that global suicide is not rational.

Since China has nuclear weapons and North Korea seems to be on the brink of establishing a nuclear arsenal, then I think we should allow another nation to give itself a chance to show its mettle: Japan.
"If our nightmare is a nuclear North Korea, China's is a nuclear Japan. It's time to share the nightmares." (Charles Knauthammer). While nuclear proliferation frightens many people, it has also steadied many nations by acknowledging the destructive force that these weapons possess. There are two nations that would like nothing more than to remove the island nation from the map, especially since it has been a steady ally of the United States. That may not be the ultimate answer to your question, but unbinding Japan's military (as established through sanctions and treaties post-WWII primarily by American policies) would provide a manner in which this issue can be temporarily sated.

Could it be that China is just a tad bit more responsible than Saddam with Nuclear Weapons? China has had weapons for years and has not once used them as a threat in negotiations, treaties, etc. Then look at North Korea. One moderately successful test and they begin threating the entire world. And about the oil- if you drive a car or use electricity (how is it produced) or use any plastics, then you are part of the reason we need oil, regardless of your country.

The United States is working on having a better relationship with China and Russia. At the same time the United States is trying to prevent nuclear arms from falling into the wrong hands. While in recent years the United States has not necessarily 'liked' China, they are not our enemy and already have a large capacity of nuclear weapons, while the countries we are currently going after do not have a capacity and thus make it easier for us to limit their activity.

Do you want to fight with China? I'd rather just buy some stuff from there and be a good neighbor.
Iraq used chemical weapons against Iran and its own population. The weapons were moved somewhere and hidden. The Iraqi Air Force planes were found buried in the desert.
If the US is in Iraq for oil, why isn't any of it coming here?

They are a member of the nuclear nonproliferation unlike North Korea, Iran, India and Pakistan. The question is why aren't we after India. There has been some accusation that China helped Pakistan with their Nukes which is a violation, but there are stronger cases that US, France and Germany helped Iraq with there nuclear program. Also Bush needs China's help to control North Korea's Nukes. There has been precedence that nations who have Nukes just got rid of it.

Ummm, something to do with China having the world's largest army and some of the lowest labor wages in the world. With the exception of Tibet, the Chinese have not showed any agression.
