I'm trying to figure out why this guy that I casually dated for over a year, called me after we parted (he moved to another state over for a job) to tell me that he met this new girl who he is casually seeing but told me he still wants to go on vacation with me & my parents? Do you think he's lying to me about this new girl, to get me jealous or to get a reaction out of me, in order for me to BEG to get him back? Why would he think if he mentioned a girl that he'd still be able to go on a trip with me? Is he missing me or what's the deal here?

Oh, he might be trying to make you jealous, but I would bet this girl does exist.
The possibilities are:
1. Trying to make you jealous
2. Considers you a friend, so doesn't think it will bug you
3. Just trying to piss you off.
4. Inconsiderate and doesn't consider your reaction
5. Hinting around at a threesome
From your post, it sounds like you are getting jealous, so if that's his intention it seems to be working. As for the other possibilities, he's your ex, you know him best. You decide which fits the facts the best.

The guy wants to have his cake and go back for seconds. You probably are going to a great vacation spot, so he can have a good time and some good booty when he goes on vacation. Then by telling you he has a gf is his out, so he can say good bye after the vacation. Either way, you being played.

he's not lying to get you jealous, but its understandable that you are.
its obvious he still wants to talk to you and be with you, but its hard to be a one-woman guy when youre so far away. and since it was only casual dating, cut him some slack.
but be honest with him and tell him you don't really like hearing about his other girls. if he was lying, he'll feel good that it bothers you. but chances are he just genuinely never thought about it.

Seems like he wants his cake and pie too. Reason being if he has someone why is he bothering you. That would detail that he would be unfaithful to you too if you were in the other girl shoes. No I believe he is telling you the truth about this girl.

He's trying to see where you stand. He wants to know if you still have feelings for him. I don't know why he just won't come out and ask you. Maybe it's pride or something!

i think to get you jealous. because he might think that you might have a guy over in your place and he wants you to get jealous so that even at a long distance relationship your relationship will be still strong.
