There are three elements that make popcorn work like this:
Moisture inside the kernel
Starch inside the kernel
The hard shell surrounding the kernel
Popcorn is a kind of corn. A kernel pops when it is heated to 400 degrees Fahrenheit, causing water inside each kernel to change to steam. Popcorn's hard cover keeps the steam from escaping, causing pressure to build up and, finally, pop goes the kernel!

It's the moisture in the kernel that becomes steam and pops it open. Old popcorn dries out and doesn't pop well. Try keeping it in your freezer. A trick to popping it without burning and getting it all popped is to put it on top of a bowl in the micro so the energy gets in more evenly.
