Gracie went through three people on one night. Boxer Art Jimmerson in the first round, Shootfighter and ex WWF wrestler Ken Shamrock in the second round, and Karate/Kickboxer Gerard Gordeux in the final

MK is right,

the co creator of the first UFC fights was Royce Gracie, and he did beat all three fighters in that first match.

In fact he dominated the octagon for a long time until many of the other fighters started cross training in both Muay Thai and Jujitsu.
