I have a bundle of vanilla beans that are rather dry. Is there a way to bring them back? Does it even matter?

They're best when they're not all dried up but have a bit of bend to them.

They are cured and dried to preserve them before they get to you in the store, so they should still be safe--- if they still somewhat resemble what they looked like when you bought them.

You can rehydrate them if they're not too far gone, in some water, but they'll be sticky and goopy.

If they look or smell moldy, or crack or break when you bend them, throw them away.

We make vanilla extract with rum when they have over dried. Just pop the beans in an inexpensive bottle of rum and shake every couple of weeks until it has the desired flavor. We leave ours 3-4 months before using it.

Personally I would cut them open and mix them with some sugar for a vanilla flavored sugar. It is great on creme brulle or in coffee. When vanilla beans get dry they lose their flavor and soaking them in water really does nothing except cause them to lose more flavor and make them messy to work with.

You can rehydrate them by soaking them in warm water for about an hour. I wouldn't do it until you are ready to use them though.
