I've always just called it as it is and thought that just saying "I miss you" is enough but apparently it's not descriptive enough for him and I'm clueless as what to say. Any ideas?

that should be enough to say! If you miss him... you miss him. You might want to be more specific with what you miss about him...
I miss your hugs
I miss your kisses
I miss talking with you
...etc.

What you say should come from your heart and have meaning too you. I would say somthing like awww hun you know how much i missed you i couldnt stop thinking of you and your smile and i saw a toronto maple leafs hat today and it reminded me of you b/c you love that team and it made me miss you even more.

tell him you miss him so much that when you wake up in the morning and know that he won't be there to hold you, you wish you could just go back to sleep, because he is always in your dreams

be honest, but if you do miss him alot, say "i miss you so much i want you to be here and just cuddle with you!"

of course it depends on how much you really do love him, but you could say "i love you ask much as the distance is from east to west" or something along those lines...
