You can 'hide' your IP address through most torrent programs by setting them up to use a proxy though this will mean that the downloads become very slow (unless you find a nice, fast, anonymous proxy- quite unlikely).
You won't be able to hide your IP address in any other way as the other computers have to know your IP else they won't connect.
If you fear the MPAA, RIAA, etc, you could try PeerGuardian which blocks IP addresses of known IPs that may monitor you (known but there will still be unknown)
