If I am baking browinies, and the recipe calls for 3 eggs, and I only have 2, what can I use for the 3rd egg?

in that instance with the brownies just add a little water..

You can actually skip the third egg. It will just make your brownies a little less "cakey", but they will be moist. If you want a brownie that is fluffy, more like cake, you could try adding a little flour in place of the egg in this case. That doesn't always work, but should be fine with brownies. Good luck.

depends on how large the eggs are. if they are big enough, you may get away with just 2. OR, search the internet for "eggless brownie recipes" i had the same thing happen when i promised my 5 year old nephew pancakes one morning...then i realized i had no eggs and no milk...believe it or not, by searching online, and being a little creative with the recipes, the pancakes weren't too bad!
OPTION 2: knock on your neighbor's door....:)

You should be able to skip it. Brownies will be more chewy, dense and less cake-like. Many box brownies offer this as an alteration. I prefer them this way.

Usually 1/4 cup of banana will replace 1 egg
