My dad just got some bear meat from a guy that he works with and would like some recipes for hor d'oeuvres' and I can't seem to find any on the net anybody know where I can find some or do you have any that you could give me?

Bear Recipe
1-2 lb bear steaks
1 qt of tomato juice
3/4 cup brown sugar
2 tbsp Worcestershire sauce
1/2 tsp black pepper
1/2 tsp celery seed
1 medium onion (diced)

Cook meat until thoroughly cooked in a slow cooker or crock pot.
Drain off fat and add ingredients above.
Let simmer for at least 4 hours.
I recommend serving with mashed potatoes as the gravy is excellent on them. This recipe is simple to prepare and doesn't take a lot of special ingredients. Everyone that I have served venison or bear with this recipe loves it and would swear that it was not wild game.

All I know is that bears are notorious for Trichinosis infestation, so definitely cook it thoroughly. Bear will also be extremely gamey tasting so you will have to do something to marinade it and get the game taste out. For recipes, you'll have to go to Borders or ***** sporting goods and check out some game recipes. You won't find one for bear hor d'oeuvres, but you might find to make bear edible and then just cut it up and top on crackers with some melted cheese or something. The old (pre 1960's) era Joy of Cooking would have something on it because it used to include a lot of game recipes. I recommend you buy one from half.com if you cook a lot of stuff that's off the wall.

Bear meat is very good, as I always have bear sausage and bear salami which I buy from Russian delis. It's a bit tough and gamey, but properly marinated and spiced, it tastes like beef jerky. Usually, the best way to marinade bear meat would be in wine vinegar and pepper corns. The vinegar tenderized the meat and the pepper corns kill any residual bacteria that may be on it. Also, it's best to smoke it with hickory for an excellent taste.

Crock pot would be the best way. Game meat is generally tough and the slower it's cooked, the more tender it will be. I'd recommend cutting it up for a stew or do it roast style in the crock pot. People hunt bears, people! That's how they get bear meat!

I've heard it was a favorite with early settlers/explorers who had access to it compared to other wild game.

If it's an autumn/early winter kill, it will be relatively juicy/fat, but all game meat is lean on average and is likely to be tougher than some cow that grew up in a pen. I'd treat it as a lean beef cut and work from there (slow-cooked BBQ bear?). You might want to consider brining it along with some meat tenderizer and seasonings.

There are two types of bear meat....

1. Meat from bears that like to dine on road kill, This meat is very gamey tasting.
2. Meat from bears that live off of fresh meat, nuts and berries, this meat is good - no nasty tastes...

I had a friend who put his on a smoker and smoked it. He said it tuned out real good. He used a dry rub on it kind of like you would use for a brisket recipe.
