I read the recipe for choc covered raspberries and it calls for shortening . Some recipes include white chocolate but doesn't mention mixing white choc. with shortening as well. So can white chocolate be melted and poured over raspberries without the shortening and firm up fine? Also, how far in advance should I make my white choc. raspberries? Overnight? Or 1 hr before showtime? Thanks so much!

How thin does the w.chocolate have to be to drizzle over the berries? And how much milk should be added to the w.choc? (about 1/2 bag of chips) thanks again!

the reason you use the shortening when melting any kind of chocolate is because it helps keep the chocolate thinned out. you can make your raspberries a few days ahead of time & store them in a ziploc or glad storage container w/a lid in the fridge. seperate layers w/wax paper so they dont stick!!

I would not even wash the berries till ready to prepare and serve moisture will soften them, as for the shortening, white chocolate is kind of an odd one, sometimes it needs shortening some times it is fine, melt it in a double boiler if you do not have one take a pot and put water in it, then a clear Glass bowl on top of the pot, so it wont fall in but will touch water, don't over fill the water, then melt the chocolate, I don't like using the shortening and will use milk, some times french van coffee creamer just enough to thin if chocolate needs it hope I helped

You can do it without, and they'll be fine. They'll need an hour so in the refrigerator to firm up, though.
