Mimosa
2 oz orange juice
Champagne
Pour orange juice into a collins glass over two ice cubes. Fill with chilled champagne, stir very gently, and serve.

A mimosa - champagne & orange juice - is a fave of mine.
I hear tell that champagne goes with pineapple juice and apple juice as well.

As far as other ingredients go, I think you're limited to non-carbonated mixers, i.e. fruit juices. Orange juice is tried and true. Pineapple and other tropical juices also sound interesting - a little experimenting might be fun.
