Pollack is a slang name, and often used in a derogatory manner. I'm Polish, and sometimes we joke around and use the word Pollack among ourselves. But the politically correct name for Polish people is Polish people or Poles. :)

I'm bilingual and speak Polish very well. The Polish language word for a Polish person is "Polak", which is pronounced the same as the English word "Pollack". So, if you use the word in company of Polish speaking people esp. from Poland they shouldn't have any reason to feel offended. In fact, they may be happy to have come across someone who knows Polish. :-)

Political correctness sucks I rather use politeness which is far more correct.
