You could easily find a coordinating tile to install on the walls around it. The sky is the limit on choices at your local DIY store. You may take a piece of the granite, floor and any other items with you so that you can match it up. good luck with your project!

Hm...gray and black granite, stainless, want your theme to be black and red...You're in luck, I used to do this for a living...
This sounds pretty modern. Your granite sounds pretty dark, I'm guessing something similar to Impala Black, which is gray and black, I'd probably keep the backsplash reasonably light otherwise it will get too dark.
Are you doing a backsplash all the way around, or just behind the stove? If you haven't considered all the way around, I suggest it because it will look more complete, just behind the stove tends to give you a "collumn" in the kitchen. But sometimes that works...
Here's my best suggestion: Find a honed limestone tile that you like that coordinates with your granite and comes in 18x18 pieces and cut it to about 4" squares (this can be varied so you are using as much full pieces as possible - if you have a contractor doing the work and are doing a full backsplash, it will cost about $200 to have it cut down, but will open up the selection of stone you can get considerably). I'm assuming your granite is shiny, the honed limestone will be matte and will give a nice contrast, also keep it from getting glaring. Check out Gasgone Blue limestone, it's a gray that might work for you. Use decos at the corners of your tiles in a pattern that is pleasing to you that are a metal that coordinates with your stainless. stoneandpewteraccents.com has some really great ones and the basic pewter with no plating that is the cheapest way to buy them works well with stainless. You could also look at the Sonoma Tile Tantrum products for your decos, it's a deep crackle glaze pooled on a ceramic tile. Just the 1x1s or 2x2s are very nice accents, you'll be looking at the colors Raffia, Pewter and Tweed, very neutral and will work well with all you've described.
I would not put red in the backsplash, save that for other accents around the kitchen, that way if you decide to change your color scheme you won't be locked into the red. If you don't like the idea of cutting down limestone you can try to find something in smaller pieces but the selection is much more limited. You could also look for a ceramic tile with a very flat surface, don't get pillowed edges as it's a less modern and more traditional look. Any ceramic will be a less modern look.
I'm presuming you are looking at backsplashes in decorating magazines. If you aren't, do it. Check out the tile stores in your area, they'll have displays, literature and lots of cool things you can use for ideas. Take samples of the materials your kitchen is made with if you can, and ask to check out samples from the store to compare colors in your own light at home. Try doing some drawings of your design ideas. A backsplash is going to be there for a really really long time, so spend some time really thinking about what's going to be there and how your life and tastes may change during the life of the backsplash. You're going to live with it for much longer than you're going to plan it! Best of luck!

You could also use stainless steel tiles. They come in 6x6 and other sizes. They also have plain ones, or ones with a texture or design in them. Or you can create a design by mixing sizes and textures, maybe put them on the diagonal. Good luck!

Home DePo or Lowes have all you could ask for.
There are sheets, and tiles of all kinds. Formica comes in every imaginable color and mix. You would only need the metal borders. A flat surface is easy to install.
