use freshwater to cook your potatoes, but season your fishwater with chicken stock, make a qt.use 4oz butter in a pan,add 4oz of flour, mix in for a couple of mins, slowly add the hot stock, when finish let it simmer 10min.This is a basic sauce for your fish, you can add anything to it,and what you dont use ,keep in the fridge.
