Bunuelos - Mexican Recipe
3 cups flour, sifted twice
1 tbsp baking powder
1 tbsp salt
1 tbsp sugar
2 eggs
3/4 cup milk
1/2 cup butter or margarine
oil for frying
In a large bowl, mix flour, baking powder and salt.
In a small bowl, beat one tbsp sugar, eggs and butter. Stir in milk. Add milk mixture to flour. If dough is too dry, add a few more drops of milk. Knead dough until it is very smooth. Shape into 20 balls. Cover and let stand for 30 minutes.
Heat oil one-inch deep in large skillet to 360 F.
Roll each ball out on a lightly-floured board into very thin six-inch circle. Fry bunuelos until golden brown, turning once. Drain on absorbent towels. Sprinkle with sugar-cinnamon topping while warm, or drizzle with syrup.
These can be frozen. Wrap separately in freezer bags. Defrost and place in a 350 F. oven for a few minutes to crips.(20 fritter)

"BUNUELOS"(FRIED INDIAN BREAD)RECIPE
ingedients
4 cups flour
2 tablespoon lard
2 tablespoon salt

directions
sift dry ingredients together,cut in lard,add water and kneed.let stand for 20 minutes.Divide dough into 12 uniform size balls. stretch each one to about 5 inches in diameter and 1/4 inch thick. deep fry at 425 degrees untill golden brown. A small hole{finger sized or smaller} all the way through the center of each round will help the dough to puff up.

cinnamon-sugar mixture
1. In large bowl, mix flour, baking powder, salt and sugar. In smaller bowl, beat eggs and milk. Add this gradually, beating, to flour mixture.
2. Add a half a stick melted butter, beat.
3. Place dough on floured surface and knead til silky and elastic.
4. Roll into balls or ropes, and flatten with the palm of your hand.
5. Fry in hot oil, (370º), til golden.
6. Drain on paper towels.
7. Roll/toss in cinnamon/sugar mix.

i make them easily by frying mission or any brand flour tortillas to golden brown.
drain excess oil by placing on top of a paper towel. but don't completely dry it cause the cinnamon sugar needs something to adhere to
then mix some sugar and cinnamon well and coat to your liking
simple yet very delicious
