What size can? One-half of a 15-16oz can is about one cup of pumpkin, which is enough for pumpkin bread or pumpkin cookies.
Pumpkin Bread
(This will make two dense loaves.)
1 C vegetable oil (I've successfully made this with 2/3 C oil)
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground ginger
1 tsp salt
4 eggs, or egg substitute to replace 4 eggs
1 C brown sugar, packed
2 C sugar
1 C pumpkin
2/3 C water
2 tsp baking soda
3 C flour
Preheat oven to 350F.
Grease two 8-1/2 x 4-1/2 loaf pans.
In a large bowl, combine oil, spices, salt, eggs, and sugars. Add pumpkin and water, mix well. Add soda and flour. (If you like, you can sift them together into a small bowl first. I don't bother.) Mix until flour is incorporated, but don't worry about small lumps. Pour into pans and bake for one hour, or until the top cracks and the sides of the bread begins to pull away from the pan and a toothpick inserted into the middle of the bread comes out clean.
Cool slightly, then remove from pans and cool completely on a wire rack. If you like, you can frost with cream cheese frosting.
Don't slice until completely cooled.
Pumpkin Cookies
1 C brown sugar, packed
1-1/4 C shortening, margarine or butter
1 egg
1 C pumpkin
2 C flour
1 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
Pre-heat oven to 350F.
Mix sugar, shortening and eggs in a medium bowl, add pumpkin and mix well. Sift dry ingredients into small bowl. Add dry ingredients to wet and mix well. Drop on ungreased cookie sheet and bake until done. Cool on cookie sheet for a few minutes, then remove and frost while SLIGHTLY warm. (DO NOT FROST WHILE HOT.)
I like to use cream cheese frosting.
Simple Cream Cheese Frosting
1/2 lb powdered sugar
1/2 stick margarine or butter, softened
1-3oz pkg cream cheese, softened
1 tsp vanilla
Cream butter and sugar. Add cream cheese and vanilla and beat until smooth.

pumpkin bread!!!!! most recipes call for a whole can but produce 2 loaves. cut a recipe in half and bake one. my favorite!

If the can is half full put it into a freezerbag and save it in the freezer. If the can is half empty throw it out

Portion it out in tablespoons, freeze, then store in the freezer in a freezer bag.
Also, it is a great source of fiber for your pets, if they will eat it. I feed some to my cat and she has had no problems with hairballs.

you can bind it with egg some flour and brown sugar and bake it in a pyllo pastry. Top with a dab of whiped cream
