My mom and grandmother has always roasted theirs this way.
(1) Pierce an X into each nut on the flat side.
(2) Place them on a cookie sheet and roast in 400 degree oven for about 30 minutes just until you see the slits on the X curl.
(3) Remove from oven and cool
