Lemon being fresh or concentrate is used widely with seafood and fish to enrich flavors and to marinate with a zing. Lemon is also a great natural perservative so the meat will last a bit longer in the fridge. But really when cooking spend the money on fresh lemons it makes everything taste better and you have the rind you can get zest from.

tell your dauhter that lemon juice is not only used in seafood but also in many other foods recipe to. why we use it, so there is no specific answer some used it to flavor many sweet and savory dishes. some use it because Sauces and foods containing lemon juice help in the digestion of fried foods, or Lemon juice can be used to tenderize meat or it can be used as a substitution for vinegar in dressings. i think this will be sufficient enough.

It cuts the "fishiness" from the seafood. In tropical countries & territories, seafood is served raw as appetizers. Lemon juice is added to season & "cook" the seafood. It's actually very delicious.

It tastes good! The sharpness of the lemon, counteracts the richness of the seafood. My spouse likes mayonaise on his seafood. Yuck!

I don't know the chemistry but lemon (or vinegar or any other acidic liquid) makes seafood tastes "less fishy". Perhaps it neutralizes a base that makes seafood taste "fishy".

I think its just a flavor thing. Kinda the same way people like vinagar on their fried fish and chips. I also suspect that when people used to have to eat fish that wasn't necessarily fresh and perhaps had a fishy odor and taste that the lemon was used to combat that.

Hmm.. well I´ll say that, it is because lemmon is the best flavor in almost anything.. isn´t?
