this is a recipe i ate a lot of when i was on Atkins diet: 1 can of salmon, 1/2 cup dry curd cottage cheese, 1/2 stalk of celery(finely chopped), few tablespoons of chopped green onion, 2 or 3 tablespoons ranch or creamy caesar dressing, teaspoon of prepared mustard. just mix everything together thoroughly.
this recipe is very high in protein, calcium, vitamin D, omega 3 and 6 fatty acids, vitamin E. It is also very low in carbs. make sure and use DRY CURD cottage cheese (it has almost zero carbs and a whopping 20 grams protein per 1/2 cup, plus calcium).
you can vary this recipe by using a can of tuna or a can of water-packed sardines.
make sure you eat the sardines and salmon WITH BONES, thats where the majority of the calcium and vit. D is located.
tuna does not contain nearly as much calcium or D or fatty acids, but is still low in carbs and a good source of protein.
you can prepare this ahead of time and doesnt need to be cooked, just dont store it in the fridge longer than 2 days.

I was on Atkins for several months and I totally understand your dilemma.
I had lots of salads w/chicken, vienna's, greenbeans, I had lots of tacos w/corn shell. I think about 11 carbs per shell.
For sweets, I would fix sugar free jello & sugar free or low fat cool whip and make parfaits. Also, sugar free ice cream & sugar freet root beer-Great Float

i like watching Low Carb on Food Network ...........it's usually on late, so tape it if need be...........they have a low of great ideas...........i was surprised about bell peppers, low in carbs & have vitamin C enough for one day
