20-Minute Cowboy Beans

4 slices bacon
1 cup onion, finely chopped
1/2 cup green bell pepper, finely chopped
1 clove garlic, crushed
1 can (15 to 16 oz.) kidney beans, rinsed, drained
1 can (15 to 16 oz.) pinto beans, rinsed, drained
3/4 cup barbecue sauce
1 Tbsp. packed brown sugar
In large skillet, cook bacon over low heat until crisp, turning occasionally. Remove from skillet; drain on paper towels.
Remove all but 2 Tbsp. drippings from skillet. Add onion, bell pepper and garlic; cook and stir over medium heat 3 to 5 minutes or until tender. Stir in remaining ingredients. Crumble bacon; return to skillet. Cover; cook 5 minutes or until heated through, stirring occasionally.
Cheesy Mashed Potatoes
Prep: 10 minutes
Cook: 20 minutes
Servings: Serves 6 to 8
1-1/2 lbs. all-purpose potatoes, scrubbed, unpeeled, cut into 1-1/2-inch pieces
1 (8 oz.) container chive and onion cream cheese spread
1/4 to 1/2 cup milk
1/2 tsp. salt
Place potatoes in medium saucepan with water to cover; bring to a boil. Reduce heat to medium; cook 15 to 20 minutes or until tender. Drain.
Mash potatoes until smooth. Add cheese spread, 1/4 cup milk and salt; stir until blended. Add additional milk, 1 Tbsp. at a time if necessary for desired consistency.
Confetti Potato Salad
Prep: 30 minutes
Refrigerate: 1 hour
Servings: Serves 4
3 medium Yukon Gold potatoes, blanched and diced
1/2 cup French green beans, blanched and diced
1/4 cup calamata olives, pitted and diced
1/4 cup red bell pepper, diced
1/4 cup yellow bell pepper, diced
1/2 cup mayonnaise
1 Tbsp. fresh tarragon, chopped
1 Tbsp. fresh chives, chopped
-- salt and pepper, to taste
Combine all ingredients in large bowl, toss and season with salt and pepper, to taste.
Chill until ready to serve.
Garlic Mashed Potatoes
2 lbs. white-skinned potatoes, washed and cubed
3-4 cloves garlic
1/4 cup cream
3 Tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
In large saucepan, cover potatoes with water and bring to a boil. Reduce heat and cook until tender (15-20 minutes).
Meanwhile, peel garlic, place in small saucepan, cover with water and simmer until very soft. Drain and cool.
Drain water from cooked potatoes, add garlic, cream and butter and puree with electric mixer until smooth.
Ginger Mushrooms
3 ounces black mushrooms
3 ounces button mushrooms
3 ounces sorrel mushrooms
1/2 ounce oyster sauce
1 ounce pickled ginger
1/2 cup water
1 Tbsp. cornstarch
1 ounce dry vermicelli noodles
1 cup vegetable oil
Preheat vegetable oil in deep fryer, or deep skillet. Place dry noodles in hot oil for 3-5 seconds until puffy. Noodles should remain white. Place noodles on a paper towel to drain off oil.
Heat another skillet or wok, add oyster sauce, water and ginger. Bring to a boil. Stir in cornstarch. Add mushrooms and cook approximately 30 seconds.
To serve, place noodles on the side of a plate and add the mushroom mixture in center of plate.
Serve immediately.
Twice Baked Potatoes
4 baking potatoes, washed and dried
4 Tbsp. butter
4-5 Tbsp. milk
1/4 tsp. salt
dash pepper
2 Tbsp. chives, chopped (optional)
2 Tbsp. grated cheddar cheese (optional)
2 Tbsp. bacon bits (optional)
2 Tbsp. sour cream (optional)
Pierce potatoes several times with fork and bake in 375°F oven for 1 to 1-1/2 hours (or 7-10 minutes in microwave oven).
To test for doneness, squeeze. If potato gives and feels soft, it is done.
With knife, cut off top 1/4 of potato and using a spoon remove pulp, placing pulp in bowl. To pulp add butter, milk and salt and pepper. Add any, or all, of the optional ingredients as desired. Mix well.
Refill potato shells with pulp mixture. If desired, place under broiler for 2-3 minutes to brown. Serve piping hot.

Twice baked potatoes are YUMMY!!! Just boil potatoes like you are making mashed potatoes after the are fully cooked from boiling, drain, and add all of the goodies that you would add to a baked potato, grated cheese, sour cream, chives and bacon bits. Stir them all up really really good put the potatoes in a casserole dish and add more cheese to the top bake @ 350 for about 30-45 min depending how much you have made and how big of a casserole you have!!!
Also, fresh asparagus with a little water and salt and butter in the microwave is GOOD with steak. After cooking in the microwave about 5 minute a bunch or so sprinkle crisp but done asparagus with Parmesan cheese!!!
French bread, sauteed onions and mushrooms with some butter or worcheshire and a good salad are always a must with STEAK!!! Enjoy and Good luck with your meal!!

Potatoes prepared anyway - baked, double baked, mashed, fried. Macaroni and cheese goes well with steak too. For a vegetable I love asparagus but it isn't in season now. Broccoli with melted cheese on top is good. Or corn on the cob. Even frozen corn on the cob (steamed or boiled of course) is pretty good. Steamed baby carrots are good.

Garlic Salted/Olive Oil/Baked Potato Skins....Save the meat of the potato for leftovers~You can sprinkle Bacon bits or Parmesan cheese before serving~

humm--medium rare steak goes well with a baked potato topped with butter and sour cream, broccoli with cheese, fresh home made bread and a large glass of ice tea.
