Marinating is actually the best way to flavor your chicken.....A few hours before.....wash chicken and place in 1 1/2 gal plastic bag....(like a storage or freezer bag....they make them in this larger size now)
Pour in 1 cup kraft zesty italian dressing, 1 can pineapple juice, 1/2 cup crushed marachino cherries with juice, 1 cup orange juice, 1 freshly squeezed lemon, 1/4 c soy sauce. Seal bag and shake to distribute evenly.....pop in fridge.....every hour or so, turn the bag. Take bag out of fridge about 1/2 hour before roasting time. When ready to cook......rub skin light with olive oil and roast as usual.....When I grill chicken breast.....I dip the chicken into the marinate every time I turn them. This makes a deliciously flavored chicken. Happy cooking

I use butter, garlic,rosemary , salt and pepper under the skin as well as on the outside as well as lemon and onion on the inside
I also "brine" it 4 hours before but that is just something I like to do makes the skin crispier and keep the juices in ( also considered a jewish thing)
if anyone is interested
1 cup kosher salt
1 cup sugar
4 cups water,
and take a huge ziploc baggie put bird in add water,salt and sugar and put in fridge for 4 hours
Some ppl actually leave it out the whole time too
then when 4 hours is up empty out the bag let chicken sit for a while on a few papers towels then rinse the chicken well
then prepare as usual

Salt and pepper are non-negotiable spices. I also like using rosemary and lemon. For a southwestern flavor, use sage, paprika and a touch of garlic.
Olive oil rubbed all over the skin helps keep your chicken moist, and makes the skin that nice crispy brown color. If you really want to flavor your meat, you can gently detach the skin from the meat (but don't remove it!), and put your herbs and spices in between the skin and meat. This works well with a turkey, too. It's killer!

I take a stick of butter & mix it w/some lemon zest, garlic salt, & pepper. I lift the skin of the chicken to make a open pocket & rub the butter all inside. then rub remaining butter & herb mixture on the outside of the bird for a crispy skin. stuff the cavity w/sliced up lemon, onion, & spices. roast like you normally would!!!!

Rub the chicken with butter or olive oil, and put a few fresh sprigs of rosemary in the cavity (along with sprinkling with salt, pepper, and paprika) and roast.
