I am bringing a salad to a New Year's party similar to that of a simple cuke and vinegar salad.

I know the simple vinegar and cuke can be made the day before, but can the same be done if radishes and leeks are added??

I don't want discolored food or soggy veggies.

Yes and no. Actually, the longer the cucumbers sit in the vinegar, the better they are. But, if you are putting in additional ingredients, the leeks can go in (although they may get a little soggy) but I would NOT put the radishes in until I was ready to take it to the party. . . .unless you'd like the entire salad colored pink. The vinegar will bleed the outside color off of the radishes and will dis-color the entire thing. This mixture is wonderful by simply using cucumbers & onions, seal in a tight jar and keep in refrigerator until you're ready. If you dare chance it, even adding the radishes at the last minute MAY discolor the entire salad. Hope this is helpful to you. Happy New Year!

Yes , that would be fine but, even the cucumbers may seem to be a little soggy if made a day before!!

No,well you can add them but do it the day of.Do the radishes and leeks maybe 4-5 hrs before serving,this will help keep them crisp.And before putting in the vineger,rince the vegies in cold water.Good luck,this will be YUMMY!

cook apple cider vinegar and sugar in sauce pan taste to see how much vinegar and sugar is to your taste turn off let cool then add to veggies chill all night for better flavor add what ever you like

I assume they would be raw as well? If so, they should be perfectly delicious.
