I tried this Rachel Ray recipe and it was awesome as well as easy to make...only changed one thing: substituted fresh fettucine for the penne. It serves four so plan on having leftovers unless you half the recipe.

You Won't Be Single For Long Vodka Cream Pasta

1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn

Crusty bread, for passing

Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Fun for the person making it, or fun for two people to make together?

If you don't mind working together in the kitchen while frying, do some tempura. You can tempura about anything - onions, chicken, beef, carrots, cauliflower, fish, shrimp, sweet potatoes, etc. You can also make little fritters from some small diced pieces of things stirred into some tempura batter. Have some different sauces for dipping. You probably would want something else clean and simple to get over all that fried food - maybe some rice, a salad, some fruit...have maybe a sorbet or something else light for dessert.

Dueling stir fry could be fun - get a bunch of different prepared/sliced/diced ingredients together along with some sauces and seasonings and see who makes up what. Have some rice or noodles on the side.

You could do something like that with a few different things - like loaded baked potatoes, custom burgers - whatever. Just get the basic ingredients together and have several extra ingredients, seasonings and sauces available. Have some other appropriate prepared side dishes available to round things out.

Fondue is a neat idea, if you have a fondue pot. It's an interactive dinner and helps keep conversation going. Otherwise, you could both get in the kitchen and make your own pizzas. Buy those individual crusts and add whatever toppings you like. Have a salad on the side and pick up a decadent dessert from the bakery. Hope it's a great evening for you.

Composed Taco Salad!
Make it all ahead of time so you can concentrate on the date!
Clean and tear up two or three kinds of lettuce, chill
Quarter tomatoes or use cherry or grape tomatoes
Cut cheese into 1/4 inch dice - try a pepper jack!
Either cook up some ground beef (or tofu) with taco seasoning or use canned chicken mixed with salsa.
Crush tortilla chips.
Jalapeno or chiipolte peppers
Olives

Put each of the above in a different serving bowl so your guest can compose his or her own salad. Offer ranch, thousand island, and/or french dressing.

the first time my ex boyfriend made dinner for me, i was so impressed at how simple this idea was and couldnt believe i had never though of it before. its really yummy. boil broccoli until tender but not too soft. get those filled fresh pasta things (the ones with like italian bacon, cheese etc in them) and boil them for 3 mins - the recommended cooking time. add them without the water to the broccoli and add a carton of fresh single cream (the one with the least fat). cook until the cream it warm. serve with crusty bread.
