God gave us dominion over animals, and although that dominion is limitless it is not intended as such. It is up to us to exercise limitless dominion with caution and love. This is a test of our power as gods in embryo.
The question about science is a totally different matter, separate from a religious one, and so it is totally personal. I don't see "torture" as ever being justified.
But your question is whether it is "worth it" more to torture animals in the name of God or science, and I'd answer 100% it'd be worth it more to do so in the name of God, should He ever ask, which He would not. Our will is secondary to that of the Father, and if He were to ask us to do so we should do it, even though it'd never happen now. Making ourselves comfortable in the name of science by executing scientific breakthroughs at the cost of animal life may seem purposeful, but you will answer for that execution of unrighteous dominion one day.
