There were no medical science yet during the time of the Old Testament and many prohibitions cannot easily be accepted by the people specially if in the food where you find most of what seems so aromatic and delicious. Pigs are known to enjoy bathing in the mud and eat just anything on sight including animal carcasses, human waste and does not stop from burrowing on root crops that are oftentimes destroying their fields. The medicine men at that time were also considered spiritual persons since old people have known those healing qualities as God given and not all can do it. Eating too much pork may have caused diseases just as we find them now. We have doctors who can explain the causes now but then, for the Old people to follow a prohibition or a caution, it must be done through the practice of their faith. Do not expect an ominous miracle when they accidentally eat pork.
In India, cow dungs have been the major source of energy for almost all household needs. The set of teeth cows and human have are similar without extended fangs and it only means that those sets are for eating fruits, leaves, vegetables and other fibrous foods. Fangs are for animals that feed on flesh and strong jaws for ripping bones of their prey. Such prohibition for slaughtering and eating cows in India does not necessarily have to be addressed as Sacred but rather as a respect for living things that have help them through the ages.

I don't know if there's a special law for eating things accidentally, but I'm sure that it has no spiritual implications.
Observant people find pork and other unkosher meals repulsive, and I'd say that their natural response would be spitting the pork out and washing their mouth.
How would you react if you accidentally ate a cat?
