I have those out of style white washed cabinets. Can I just sand them, varnish them and turn them into wood finished cabinets?

Before you pull all the cabinets down, do this first. Take ONE of the doors off the cabinets and sand the side of the cabinet door down to bare wood. depending on what kind of wood it is, such as maple, oak or another hardwood, the wood stain finish will look great so long as you fully sand the wood all the way down to 2000 grit sand paper. If the wood is pine, consider a "wash" style wood finish. "Wash" finishes have a see-through type color to the and show both the wood grain as well as the color of the finish. If applied properly, the "wash" loos great, if not,it needs to be redone.

I think if you try the back of a cabinet door, you will find that it is going to be a very long and difficult project, if it is a very light white wash ,you may be satisfied with less effort. once the sanding is done you may even want to wipe them down with stain

Sure, that is exactly what you can do. Have fun!
