dont get Martini & Ross Asti its just sparkling wine, try the moet white star! its as good as the real expensive ones in my opinion.

Good question. Dom Perignon is sooooooooooo over rated and not worth the money that people spend on it. For a nice bottle under $40 I would suggest a bottle Tattinger Brut Reserve or Demi Sec. Both are a fine French Champagne choice with very fine ( tiny) bubbles and subtle flavors of fresh fruit. The Brut Reserve has a hint of honey where as the Demi Sec is a little deeper in color and slightly bolder taste. If you want to stay under $20, I would stick with a nice bottle of Korbel. They are from California and have a nice selection of decent champagnes that will not break your bank! Cheers and Happy New Year!!!!

Moet White Star is good, around here you can get it for about $35. For $11 you can get a bottle of Martini & Rossi Asti which is an excellent semi-sweet sparkling wine. For a decent yet cheap Brut, try Freixenet ($9).

Try substituting champagne for vermouth. If it's gone flat, it doesn't matter. The essence is there. Shrimp Scampi Ingredients * 1 1/2 pound jumbo shrimp, shelled and de-veined * Kosher salt and freshly ground black pepper * 2 tablespoons unsalted butter * 2 teaspoons minced garlic * 1/4 cup dry white vermouth * 1 tablespoon freshly squeezed lemon juice * 2 teaspoons finely chopped flat-leaf parsley leaves * 1/4 teaspoon grated lemon zest Directions Put the shrimp on a large pie pan or plate and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced. Heat a large skillet over medium heat. Season the shrimp with salt and pepper. Add the butter to the skillet. When the foaming subsides, raise the heat to high, and invert the plate of shrimp over the pan so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, for 1 minute. Add the garlic and cook for 1 minute. Turn the shrimp over and cook for 2 minutes more. Transfer the shrimp to a bowl. Return the skillet to the heat and pour in the vermouth and lemon juice. Boil the liquid until slightly thickened, about 30 seconds. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Stir the zest and parsley into the sauce. Pour the sauce over the shrimp, season with salt and pepper to taste and toss to combine. Divide the shrimp among 4 plates or arrange on a platter and serve.

Hi,
Champagne is only from Champagne - France.
Others are sparkling wine (not so expensive and
not so good - if I could say difference in quality is maybe 10 %).
In any case I prefer Champagne when I do not think about money.
My favorite is brut and if you like not too expensive it is
NV (non-vintage).

Charles Heidsieck
Taittinger
Jacquart
Krug (is really excellent but expensive)

for under $20 try Cuvee M from Mumm Napa. Has a blue label. Nice peaches and cream taste. Very popular here in Napa at most events that I work in the wine country.
