I am looking for something that he can do his homework on and also use to draw and do other things. Its difficult to find something that is his size though. Has anyone seen anything online or at a store that is adjustable or smaller than adult sized, but larger than preschool size?

Get him a normal children's desk. Then, you won't have to buy him one again in three years when he outgrows this desk. He should be able to use it for the rest of the time he lives at home. It it's too tall for him, get him a chair that you can adjust the height of.
