Parmesan-Crusted Vegetarian Sandwiches:
6 tablespoons unsalted butter, softened
1/4 cup freshly grated Parmesan cheese
Salt and freshly ground pepper
8 thick slices of firm white or oatmeal bread
1 tablespoon plus 2 teaspoons mayonnaise
1 tablespoon plus 1 teaspoon Dijon mustard
2 ripe avocados
2 tablespoons fresh lime juice
12 thin tomato slices
4 thin red onion slices
2 cups alfalfa sprouts
1. In a small bowl, blend the butter with the Parmesan and season with salt and pepper. Spread 1 side of each bread slice with the Parmesan butter. In another small bowl, blend the mayonnaise with the mustard. Halve and pit the avocados and thinly slice them lengthwise. Sprinkle the slices with the lime juice.
2. Put 2 to 3 slices of bread, buttered side down, in a large skillet set over moderate heat. Cook until the bottoms are crisp and deep brown, about 3 minutes. Remove from the pan and repeat with the remaining bread.
3. Put 4 of the cheese toasts on a work surface, browned side down. Arrange an avocado half and 3 tomato slices on each toast and season with salt and pepper. Top each with 1 onion slice, 1 tablespoon of the mustard-mayonnaise and 1/2 cup of alfalfa sprouts. Top with the remaining cheese toasts, browned side up.
Yield: MAKES 4 SANDWICHES

I used to be a vegetarian, but health issues came up and I started eating meat again and my health issues were cleared up.....At any rate, here are a few suggestions:
Onion, Garlic and Roasted Red Pepper Fritatta
Vegetarian Meat-less Loaf (Ground nuts and cheese loaf)
Chunky Vegetable Soups with Dumplings
Mushroom, Cheese and Onion Omelette's
Eggs Benedict (substitute tomato or avocado slices for the meat)
Vegetable and Marinated Tofu Stir Frys
Marinated Vegetable Salads (you can purchase pre-marinated veggies, artichokes, mushrooms, tomatoes, olives at a good Italian deli) along with some Garlic Cheese Bread
Baked Vegetable Gratin
If you have the availability to get tortillas or Wraps, you can put just about anything into a wrap.......
Eggplant Parmesan (try foodtv.com)

Being as it is christmas we all have cheese knocking about so try this recipe. Leek and Stilton Eccles cakes.
8oz puff pastry.shop frozen fine. For the filling you will need 12oz leeks,trimmed and thinly sliced,2 tbs fresh chopped herbs, parsley & oregano,4oz stilton crumbled, 1 tbs breadcrumbs. Heat 2 tbs olive oil in pan, add leeks cook until softened. Add herbs, stilton, breadcrumbs and seasoning to taste. Leave to cool.Roll out pastry about thick as £1 coin maks 4. Add filling gather up edges to make a ball, turn upside down and press flat, egg wash and sprinkle mustard or poppy seeds over. Bake in gas 6 200c oven for approx 20 mins. Serve with big salad or veg.
I am assuming you have cooking skills so this makes sense. It is cheap and tasty and are good hot or cold.

Stuffed Aubergines - you can stuff them with roasted vegetables and top with breadcrumbs. Serve with a greek salad,
Also I suggest get two baking potatoes, and cook as per jacket spud, halve them. Then grill or fry leeks mushrooms and peppers, smother the spuds, and cover with grated cheese, grill 'til golden. To spice up a bit mix some stone ground mustard in with the cheese before grilling.

Cous-cous deffo. What about stir fried rice, baked potato and beans, home made veg soup, roast flat mushrooms, baked apples, add veg suet dumplings to a curry, tofu, ratatouille, bean salads - loads of varieties, wok fried noodles, oriental vegetables, gazpacho,baby sprouts with toasted almonds accompanying a rich tomato tartlet, daal, puy lentils and french beans. I'm hungry. :-)

I have a snack..
Apple pie dream
1 apple
3 scoop french vanilla ice cream
3 tablespoons caramel syrup
sprinkle of cinnamon
whipped cream
Peel the apples and cut into bite-sized pieces. Put apples pieces, ice cream Caramel syrup, and cinnamon in blender. Then blend. Top with whipped cream.

One of my favorite foods to eat that is super cheap is butterbeans with cornmeal muffins. Do you eat dairy? If not, you can substitute other ingredients in the recipes below. This meal is super filling and tastes soo good!
By the way, this whole meal probably costs around $2.00 total.

WOW! A lot of people have already answered but anyways.... A really good "side dish thingy" would be...
zuccines (i don't know how to spell that)
pineapple (tho it sounds weird)
Onion (even if you don't like them... they taste better like this)
Carrots (Yes... they're good!!)
And take all of above... and barbecue for about 10 mins.. until nice and browish... maybe a tad of black.. and you have to flip them over too!!
another good thing is....
SOYBEANS!!
soybeans with garlic salt is reaaaaaaaaaaaaalllllly good!
soybeans with shoyu sauce...
also....
GREEN BEANS!!
greenbeans with a bit of butter is aways yummy!
