Place the carcass into a large stock pot. If it doesn't fit, you may have to break it up.
Add water and boil for at least 1 hour - boiling 2-3 hours extracts more of the nutrition.
Strain the liquid and discard the bones etc.
Now add vegetables of your choice (potatoes, onions, carrots) to the liquid and place everything back into the stock pot.
Boil until vegetables are tender.
Add spices to your liking and serve.

Here's how to make turkey and dumplings.
Put the whole thing in a large pot and cover it with water. Bring it to a boil and then put the lid on and let it simmer for two hours. When it's done, remove any meat from the bone and throw away the bare bones. Put the meat back in the pot with the water and add 6 cubes or 6 teaspoons turkey or chicken boullion. Salt and pepper to taste. Bring to a boil again. Then, make your favorite drop biscuit recipe. (there's a good one on the side of a bisquick box) Make the dough and drop it by teaspoonfuls into the boiling broth. Put a lid on the pot and keep it on for 20 minutes. (If you lift the lid at any point during the 20 minutes you will ruin the recipe.) When time is up, remove the lid and serve immediately. This should easily serve six. My favorite!

Stock is easy. Toss the carcass in a pot with around 6-9 cups of water. Toss in quartered onions, celery (with tops if you have them), garlic, baby carrots, some salt and pepper and a couple bay leaves. Simmer for a few hours. Then strain everything, discard the veggies, pick the meat off the bone, and use the stock to make soup.
It's really easy and very good.

Cream of Turkey and Rice Soup:
After you've feasted on your holiday bird, here's an idea for the carcass.
1 turkey carcass
1/2 cup butter or margarine
1/2 cup all-purpose flour
1 large onion, chopped (about 1 1/2 cups)
2 shallots, chopped
3 large carrots, scraped and chopped
3 stalks celery, sliced
1 cup uncooked long-grain rice
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
1 cup whipping cream
Place turkey carcass in a large stockpot or Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 1 hour. Remove carcass from broth, reserving 10 cups broth. Cool carcass, and pick meat from bones. Set meat aside.
Melt butter in stockpot over medium-high heat. Add flour and cook 5 minutes, stirring constantly. (Roux will be a blond color.) Add onion, shallots, carrot, and celery to roux; reduce heat to medium. Cook 10 minutes, stirring often. Stir in reserved broth, turkey meat, rice, salt, pepper, and thyme; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender. Add whipping cream; simmer, uncovered, 5 minutes or to desired thickness.
Yield: 3 1/2 quarts

i made turkey and noodles add butter for rich flavor when you boil it the meat will fall off when you take out the carcass stir through the pan with a big slotted spoon for bones and stuff

boil carcus in 6-7 cups of salt water till boiling remove meat & carcus from water add more turkey, carrots ( baby carrots 1 bag) 1 clove garlic minced 2 cups chopped celery 1 teaspoon black pepper add rotini noodles simmer till noodles are soft & serve
