It means that some people are so quick with their hands that your don't see what they have done. Like a magician. His hands move faster than the eye can catch as to how he did the trick.

Mistrust-Meaning that someones hands can move quicker then the eye. I've seen this myself in a dice game of chance. My opponent would manipulate the dice right in front of me without me catching on until his score was to outrageous to believe.
